when I hover over a data point a tooltip is being displayed:
But sometimes it shows way too much data and I don’t need that.
Is there any way to customise and limit what will be displayed in the tooltip ?

What is your data source? And what version of grafana are you using?
Prometheus is the data source and I am using Grafana 9.1.6

Yes, you can do that by using the Override function.
