What should I use to visualize name and time data?

Hi there
Hopefully this is the right place to ask this, I am a n00b and want to play around with grafana, I have some data that looks like John Doe, 2019-06-08 08:56:02. I have it in a csv file right now, but I can put it in a database, I have two questions -

1.) What database would you recommend?
2.) To visualize date and time, what would you recommend as a graph type?

if you want to see text, the only thing you could use is a table panel, I recommend postgreSQL
