Hi I would like to update Grafana from 7.2 to the latest version. Just a quick question if I do it on production will it cause an issue?

I would not advise doing this in production. Grafana 8.0 represents the largest jump between any two major versions of Grafana. It is a big step forward, but there are some breaking changes. It would be much wiser to test this upgrade in a developer environment before pushing the update to prod. 
Some areas to pay attention to. There is a breaking change involving SQL-based datasources, and the shift from Legacy alerting to Unified Alerting is also non-trivial
