What are the 2 thresholds that you created? Please expand and post a screenshot (with the 4 gauges also displayed on the same screenshot).
Have you tried a Rename by regex transformation to fix the bottom labels to your liking? There are a lot of examples here on the forum.

you can use the Data link
and you can resize the Text size(title) or modify Legend in the options in the query.

Each chart has a different feature; there is no other way than Data Link for Gauge Chart.
In the case of Stats Chart or Pie Chart, when your mouse hover, all labels are visible without any settings.
Usually, only the labels required for Legend are printed and used.
