I tried to modify a data-source name and it broke all my concerned panels.
When the name of a data source is changed, do I really need to re-select the data-source with the new name ?

Sadly yes, unless you the data source is marked as “default” . Then you can change the name (or change make another datasource the default) but you cannot do this retroactively
